A hearty Italian soup featuring meatballs, pasta, and fresh greens in a flavorful broth.
Ingredients

- 1/2 pound extra-lean ground beef
- 1 egg, lightly beaten
- 2 tablespoons bread crumbs
- 1 tablespoon grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 3 cloves garlic, minced
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 8 cups chicken broth
- 1/2 cup acini di pepe pasta
- 2 cups chopped escarole
- 1 carrot, diced
Instructions
- In a large bowl, combine ground beef, egg, bread crumbs, Parmesan cheese, parsley, garlic, salt, and pepper. Mix well and form into small meatballs.
- In a large pot, bring chicken broth to a boil. Add meatballs and cook for 10 minutes.
- Add pasta and carrot to the pot and cook for another 8 minutes.
- Stir in escarole and cook until wilted, about 2 minutes.
- Serve hot and garnish with additional Parmesan if desired.
Notes
For a lighter version, use ground turkey instead of beef. Ensure meatballs are small for even cooking.
