Description

A hearty Italian soup featuring meatballs, pasta, and fresh greens in a flavorful broth.


Ingredients

  • 1/2 pound extra-lean ground beef
  • 1 egg, lightly beaten
  • 2 tablespoons bread crumbs
  • 1 tablespoon grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 3 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 8 cups chicken broth
  • 1/2 cup acini di pepe pasta
  • 2 cups chopped escarole
  • 1 carrot, diced

Instructions

  1. In a large bowl, combine ground beef, egg, bread crumbs, Parmesan cheese, parsley, garlic, salt, and pepper. Mix well and form into small meatballs.
  2. In a large pot, bring chicken broth to a boil. Add meatballs and cook for 10 minutes.
  3. Add pasta and carrot to the pot and cook for another 8 minutes.
  4. Stir in escarole and cook until wilted, about 2 minutes.
  5. Serve hot and garnish with additional Parmesan if desired.

Notes

For a lighter version, use ground turkey instead of beef. Ensure meatballs are small for even cooking.
