- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup onion, finely chopped
- For the sauce:
- 1 cup pineapple juice
- 1/2 cup brown sugar
- 1/4 cup vinegar
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
Instructions
- In a large bowl, mix ground beef, breadcrumbs, egg, and onion until well combined.
- Shape the mixture into 1-inch meatballs.
- Heat oil in a skillet over medium heat and brown the meatballs on all sides.
- In a separate saucepan, combine pineapple juice, brown sugar, vinegar, and soy sauce; bring to a boil.
- Dissolve cornstarch in a little water and stir into the sauce to thicken.
- Add the meatballs to the sauce and simmer for 10-15 minutes.
Notes
For a healthier version, use ground turkey instead of beef. Serve with steamed rice or vegetables.
