Ingredients

  • 1 pound boneless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 cups mixed vegetables (such as bell peppers, broccoli, and carrots)
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the chicken pieces and season with salt and pepper. Stir fry until browned and cooked through, about 5-7 minutes.
  3. In a small bowl, mix together honey, soy sauce, garlic, and ginger.
  4. Pour the sauce mixture over the chicken and stir to coat.
  5. Add the mixed vegetables and continue to stir fry for another 3-5 minutes until vegetables are tender-crisp.
  6. Serve hot over rice or noodles.

Notes
