- 2 tablespoons vegetable oil
- 1/4 cup honey
- 1/4 cup soy sauce
- 4 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 cups mixed vegetables (such as bell peppers, broccoli, and carrots)
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the chicken pieces and season with salt and pepper. Stir fry until browned and cooked through, about 5-7 minutes.
- In a small bowl, mix together honey, soy sauce, garlic, and ginger.
- Pour the sauce mixture over the chicken and stir to coat.
- Add the mixed vegetables and continue to stir fry for another 3-5 minutes until vegetables are tender-crisp.
- Serve hot over rice or noodles.
Notes
For a spicier version, add red pepper flakes to the sauce. Ensure chicken is fully cooked to an internal temperature of 165°F.
