Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 cups mixed vegetables (such as carrots, potatoes, and broccoli)
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 400Β°F (200Β°C).
  2. In a small bowl, whisk together honey, Dijon mustard, olive oil, garlic powder, salt, and pepper to make the glaze.
  3. Place the chicken breasts in a baking dish and brush generously with the honey mustard glaze.
  4. Arrange the mixed vegetables around the chicken in the baking dish.
  5. Roast in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165Β°F (75Β°C) and the vegetables are tender.
  6. Remove from the oven and let rest for 5 minutes before serving.
