Instructions
- Preheat your oven to 400Β°F (200Β°C).
- In a small bowl, whisk together honey, Dijon mustard, olive oil, garlic powder, salt, and pepper to make the glaze.
- Place the chicken breasts in a baking dish and brush generously with the honey mustard glaze.
- Arrange the mixed vegetables around the chicken in the baking dish.
- Roast in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165Β°F (75Β°C) and the vegetables are tender.
- Remove from the oven and let rest for 5 minutes before serving.
