Ingredients

  • 1 large onion, finely chopped
  • 1 pound fresh mushrooms, sliced
  • 2 tablespoons paprika
  • 2 teaspoons dried dill
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups chicken or vegetable broth
  • 1 cup milk
  • 1/2 cup sour cream
  • 2 tablespoons all-purpose flour
  • Fresh parsley for garnish

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the sliced mushrooms, paprika, dill, salt, and pepper; cook for another 5 minutes.
  4. Pour in the broth and bring to a boil, then reduce heat and simmer for 15 minutes.
  5. In a small bowl, whisk together the milk, sour cream, and flour until smooth.
  6. Gradually add the milk mixture to the soup, stirring constantly, and cook until thickened, about 5 minutes.
  7. Serve hot, garnished with fresh parsley.
