- 1 large onion, finely chopped
- 1 pound fresh mushrooms, sliced
- 2 tablespoons paprika
- 2 teaspoons dried dill
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups chicken or vegetable broth
- 1 cup milk
- 1/2 cup sour cream
- 2 tablespoons all-purpose flour
- Fresh parsley for garnish
Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the sliced mushrooms, paprika, dill, salt, and pepper; cook for another 5 minutes.
- Pour in the broth and bring to a boil, then reduce heat and simmer for 15 minutes.
- In a small bowl, whisk together the milk, sour cream, and flour until smooth.
- Gradually add the milk mixture to the soup, stirring constantly, and cook until thickened, about 5 minutes.
- Serve hot, garnished with fresh parsley.
