Ingredients

  • 2 pounds chicken breasts, boneless and skinless
  • 1 cup carrots, diced
  • 1 cup celery, chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon thyme
  • 1 cup all-purpose flour
  • 1 pie crust (for topping)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add chicken breasts and cook until browned on both sides, about 5 minutes per side. Remove and set aside.
  3. In the same skillet, add carrots, celery, onion, and garlic. Sauté until vegetables are softened, about 5-7 minutes.
  4. Stir in flour and thyme, cooking for 1-2 minutes until incorporated.
  5. Gradually add chicken broth and heavy cream, stirring constantly until the mixture thickens.
  6. Add frozen peas and return the chicken to the skillet. Season with salt and pepper.
  7. Transfer the mixture to a baking dish and top with pie crust.
  8. Bake in the preheated oven for 30-35 minutes, or until the crust is golden and the filling is bubbly.
  9. Let cool for 10 minutes before serving.

Notes

For a healthier version, use low-fat cream and add more vegetables. This dish can be prepared ahead and refrigerated overnight.
