Description

A creamy and delicious cherry cheesecake that’s perfect for any occasion, featuring a graham cracker crust and a sweet cherry topping.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 2 packages (8 oz each) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 can (21 oz) cherry pie filling

Instructions

  1. Preheat oven to 325°F (165°C).
  2. In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat cream cheese until smooth. Add 1 cup sugar and vanilla; mix well.
  4. Add eggs one at a time, beating after each addition.
  5. Pour mixture over crust and bake for 55 minutes or until center is set.
  6. Cool completely, then top with cherry pie filling and refrigerate for at least 2 hours before serving.

Notes

For a richer flavor, use full-fat cream cheese. Store in the refrigerator for up to 3 days.
