- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 2 packages (8 oz each) cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 1 can (21 oz) cherry pie filling
Instructions
- Preheat oven to 325°F (165°C).
- In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese until smooth. Add 1 cup sugar and vanilla; mix well.
- Add eggs one at a time, beating after each addition.
- Pour mixture over crust and bake for 55 minutes or until center is set.
- Cool completely, then top with cherry pie filling and refrigerate for at least 2 hours before serving.
Notes
For a richer flavor, use full-fat cream cheese. Store in the refrigerator for up to 3 days.
