Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 cups semi-sweet chocolate chips
  • 1 tablespoon vegetable shortening (optional, for smoother chocolate)

Instructions

  1. In a large bowl, mix the peanut butter and softened butter until smooth.
  2. Gradually add the powdered sugar and stir until a dough forms.
  3. Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.
  4. Refrigerate the balls for about 30 minutes to firm up.
  5. In a microwave-safe bowl, melt the chocolate chips and shortening in 30-second intervals, stirring until smooth.
  6. Dip each peanut butter ball into the melted chocolate, coating completely, and return to the baking sheet.
  7. Refrigerate again for at least 1 hour until the chocolate sets.
  8. Serve and enjoy!

Notes

These truffles can be stored in an airtight container in the refrigerator for up to 2 weeks. For a variation, add crushed nuts to the peanut butter mixture.
