- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 2 cups semi-sweet chocolate chips
- 1 tablespoon vegetable shortening (optional, for smoother chocolate)
Instructions
- In a large bowl, mix the peanut butter and softened butter until smooth.
- Gradually add the powdered sugar and stir until a dough forms.
- Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.
- Refrigerate the balls for about 30 minutes to firm up.
- In a microwave-safe bowl, melt the chocolate chips and shortening in 30-second intervals, stirring until smooth.
- Dip each peanut butter ball into the melted chocolate, coating completely, and return to the baking sheet.
- Refrigerate again for at least 1 hour until the chocolate sets.
- Serve and enjoy!
Notes
These truffles can be stored in an airtight container in the refrigerator for up to 2 weeks. For a variation, add crushed nuts to the peanut butter mixture.
