For the Crust:
- 1 large head romaine lettuce, chopped
- 1 cup chopped salami
- 1 cup chopped provolone cheese
- 1 cup cherry tomatoes, halved
- 1/2 cup pepperoncini, sliced
- 1/2 cup red onion, thinly sliced
- 1 (15 oz) can chickpeas, rinsed and drained
- 1/3 cup grated parmesan cheese
- 1/4 cup fresh basil, chopped
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- In a large bowl, combine the chopped romaine, salami, provolone, tomatoes, pepperoncini, red onion, chickpeas, parmesan, and basil.
- In a small bowl or jar, whisk together the olive oil, red wine vinegar, oregano, garlic powder, salt, and pepper until well combined.
- Pour the dressing over the salad ingredients.
- Toss everything together until evenly coated. Serve immediately.
