Description

A vibrant and crunchy salad featuring classic Italian deli meats, cheeses, and vegetables, all chopped and tossed in a tangy red wine vinaigrette.


Ingredients

For the Crust:

  • 1 large head romaine lettuce, chopped
  • 1 cup chopped salami
  • 1 cup chopped provolone cheese
  • 1 cup cherry tomatoes, halved
  • 1/2 cup pepperoncini, sliced
  • 1/2 cup red onion, thinly sliced
  • 1 (15 oz) can chickpeas, rinsed and drained
  • 1/3 cup grated parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine the chopped romaine, salami, provolone, tomatoes, pepperoncini, red onion, chickpeas, parmesan, and basil.
  2. In a small bowl or jar, whisk together the olive oil, red wine vinegar, oregano, garlic powder, salt, and pepper until well combined.
  3. Pour the dressing over the salad ingredients.
  4. Toss everything together until evenly coated. Serve immediately.

Notes

You can customize the seasonings to taste.
