For the Crust:
- 1 large head romaine lettuce, chopped
- 1 cup chopped radicchio
- 1/2 red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup pepperoncini, sliced
- 1 cup chickpeas, rinsed and drained
- 4 ounces salami, chopped
- 4 ounces mozzarella cheese, cubed
- 1/3 cup grated parmesan cheese
- 1/4 cup extra virgin olive oil
- 3 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- In a large bowl, combine the chopped romaine, radicchio, red onion, cherry tomatoes, pepperoncini, chickpeas, salami, mozzarella, and parmesan cheese.
- In a small bowl or jar, whisk together the olive oil, red wine vinegar, oregano, garlic powder, salt, and pepper until well combined.
- Pour the dressing over the salad ingredients just before serving.
- Toss the salad thoroughly until everything is evenly coated with the dressing. Serve immediately.
