Description

A vibrant and crunchy salad packed with classic Italian deli flavors, all chopped into bite-sized pieces and tossed with a tangy red wine vinaigrette.

For the Crust:

  • 1 large head romaine lettuce, chopped
  • 1 cup chopped radicchio
  • 1/2 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup pepperoncini, sliced
  • 1 cup chickpeas, rinsed and drained
  • 4 ounces salami, chopped
  • 4 ounces mozzarella cheese, cubed
  • 1/3 cup grated parmesan cheese
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine the chopped romaine, radicchio, red onion, cherry tomatoes, pepperoncini, chickpeas, salami, mozzarella, and parmesan cheese.
  2. In a small bowl or jar, whisk together the olive oil, red wine vinegar, oregano, garlic powder, salt, and pepper until well combined.
  3. Pour the dressing over the salad ingredients just before serving.
  4. Toss the salad thoroughly until everything is evenly coated with the dressing. Serve immediately.

Notes

You can customize the seasonings to taste.
