Description

This recipe features succulent chicken thighs glazed with sweet mango and topped with a creamy basil-coconut sauce for a tropical flavor explosion.


Ingredients

  • 4 bone-in chicken thighs
  • 2 ripe mangoes, peeled and pureed
  • 1 cup coconut milk
  • 1/2 cup fresh basil leaves, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375Β°F (190Β°C).
  2. Season chicken thighs with salt and pepper.
  3. In a bowl, mix mango puree with garlic and olive oil to make the glaze.
  4. Brush the glaze over the chicken thighs.
  5. Place chicken in a baking dish and bake for 25 minutes.
  6. While baking, simmer coconut milk and basil in a saucepan until thickened.
  7. Remove chicken from oven, pour the creamy sauce over it, and bake for another 10 minutes.
  8. Let rest for 5 minutes before serving.

Notes

For a spicier version, add chili flakes to the glaze. Ensure mangoes are ripe for the best sweetness.
