- 4 bone-in chicken thighs
- 2 ripe mangoes, peeled and pureed
- 1 cup coconut milk
- 1/2 cup fresh basil leaves, chopped
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375Β°F (190Β°C).
- Season chicken thighs with salt and pepper.
- In a bowl, mix mango puree with garlic and olive oil to make the glaze.
- Brush the glaze over the chicken thighs.
- Place chicken in a baking dish and bake for 25 minutes.
- While baking, simmer coconut milk and basil in a saucepan until thickened.
- Remove chicken from oven, pour the creamy sauce over it, and bake for another 10 minutes.
- Let rest for 5 minutes before serving.
Notes
For a spicier version, add chili flakes to the glaze. Ensure mangoes are ripe for the best sweetness.
