Ingredients

  • 2 cups all-purpose flour
  • 1 cup crushed pineapple, drained
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch cake pan.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. Stir in vanilla extract.
  5. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  6. Gradually add dry ingredients to the wet mixture, alternating with milk.
  7. Fold in crushed pineapple.
  8. Pour batter into prepared pan and bake for 30-35 minutes or until a toothpick inserted comes out clean.
  9. Allow to cool before serving.

Notes

For extra juiciness, add fresh pineapple chunks on top before baking.
