Description

A classic Southern pie with a gooey filling made from eggs, sugar, coconut, and pecans, baked in a crust for a crunchy texture.


Ingredients

  • 3 large eggs, beaten
  • 1 cup granulated sugar
  • 1 cup sweetened flaked coconut
  • 1 cup chopped pecans
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350Β°F (175Β°C).
  2. In a large mixing bowl, beat the eggs until well combined.
  3. Stir in the sugar, coconut, pecans, vanilla extract, and salt until evenly mixed.
  4. Pour the mixture into the unbaked pie crust.
