Description

A classic Southern pie with a sweet, crunchy filling made from graham cracker crumbs, coconut, and pecans, often served as mini versions for a delightful treat.


Ingredients

  • 1 unbaked 9-inch pie crust
  • 1 1/2 cups graham cracker crumbs
  • 1 1/2 cups sweetened shredded coconut
  • 1 1/2 cups chopped pecans
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350Β°F (175Β°C).
  2. In a large bowl, mix together the graham cracker crumbs, shredded coconut, chopped pecans, and granulated sugar.
  3. Stir in the melted butter, eggs, vanilla extract, and salt until well combined.
  4. Pour the mixture into the unbaked pie crust.
  5. Bake for 45-50 minutes, or until the top is golden and set.
  6. Allow the pie to cool completely before serving.

Notes

For mini versions, use muffin tins and adjust baking time to 20-25 minutes. Best served with whipped cream or ice cream.
