- 1 unbaked 9-inch pie crust
- 1 1/2 cups graham cracker crumbs
- 1 1/2 cups sweetened shredded coconut
- 1 1/2 cups chopped pecans
- 1 1/2 cups sugar
- 6 egg whites
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine graham cracker crumbs, shredded coconut, chopped pecans, and sugar.
- In a separate bowl, beat egg whites until stiff peaks form, then fold in vanilla extract.
- Gently fold the egg white mixture into the dry ingredients until just combined.
- Pour the mixture into the unbaked pie crust.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown.
- Allow to cool completely before serving.
Notes
This pie is best served chilled and can be stored in the refrigerator for up to 3 days.
