Description

A classic Southern pie made with coconut, pecans, and graham crackers, resulting in a crunchy texture like sawdust.


Ingredients

  • 1 unbaked 9-inch pie crust
  • 1 1/2 cups graham cracker crumbs
  • 1 1/2 cups sweetened shredded coconut
  • 1 1/2 cups chopped pecans
  • 1 1/2 cups sugar
  • 6 egg whites
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, combine graham cracker crumbs, shredded coconut, chopped pecans, and sugar.
  3. In a separate bowl, beat egg whites until stiff peaks form, then fold in vanilla extract.
  4. Gently fold the egg white mixture into the dry ingredients until just combined.
  5. Pour the mixture into the unbaked pie crust.
  6. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown.
  7. Allow to cool completely before serving.

Notes

This pie is best served chilled and can be stored in the refrigerator for up to 3 days.
