Instructions
- Preheat your oven to 350Β°F (175Β°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt; set aside.
- In a large bowl, cream the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the key lime zest and juice.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Add food coloring if desired.
- Drop tablespoon-sized scoops of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden. Cool on the sheets for 5 minutes before transferring to a wire rack.
Notes
For a more intense lime flavor, use fresh key limes. Store cookies in an airtight container for up to 5 days.
