For the Crust:
- 1 cup graham cracker crumbs
- 4 tbsp unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup heavy cream, divided
- 6 oz fresh raspberries
- 2 tbsp powdered sugar
- 4 oz semi-sweet chocolate chips
Instructions
1. Prepare the Crust:
- Make the crust: Combine graham cracker crumbs and melted butter. Press 2 tablespoons into the bottom of each jar.
- Make the filling: Beat cream cheese, granulated sugar, and vanilla until smooth. In a separate bowl, whip 1/2 cup of heavy cream to stiff peaks, then fold into the cream cheese mixture. Divide evenly among the jars.
- Make the sauce: Mash raspberries and powdered sugar together in a bowl until saucy. Spoon a layer over the cheesecake filling.
- Make the ganache: Heat the remaining 1/2 cup of heavy cream until steaming. Pour over chocolate chips, let sit for 2 minutes, then whisk until smooth. Let cool slightly before spooning over the raspberry layer.
- Chill the jars in the refrigerator for at least 4 hours, or until set, before serving.
