A delightfully easy and refreshing no-bake dessert with a creamy lemon filling on a buttery graham cracker crust.

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 (8 oz) package cream cheese, softened
  • 1 (14 oz) can sweetened condensed milk
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup heavy whipping cream, whipped

Instructions

1. Prepare the Crust:

  1. Combine graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of a 9×9 inch pan to form the crust.
  2. In a large bowl, beat the softened cream cheese until smooth. Gradually beat in the sweetened condensed milk until well combined.
  3. Stir in the fresh lemon juice and lemon zest. The mixture will thicken slightly.
  4. Gently fold the whipped cream into the lemon mixture until no white streaks remain.
  5. Pour the filling over the prepared crust and spread evenly. Refrigerate for at least 4 hours, or until set, before cutting into bars.
