For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1 (8 oz) package cream cheese, softened
- 1 (14 oz) can sweetened condensed milk
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 cup heavy whipping cream, whipped
Instructions
1. Prepare the Crust:
- Combine graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of a 9×9 inch pan to form the crust.
- In a large bowl, beat the softened cream cheese until smooth. Gradually beat in the sweetened condensed milk until well combined.
- Stir in the fresh lemon juice and lemon zest. The mixture will thicken slightly.
- Gently fold the whipped cream into the lemon mixture until no white streaks remain.
- Pour the filling over the prepared crust and spread evenly. Refrigerate for at least 4 hours, or until set, before cutting into bars.
