Description

Turn your leftover mashed potatoes into crispy, cheesy puffs that are perfect for snacks or appetizers.


Ingredients

  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1 large egg
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 cup chopped chives

Instructions

  1. Preheat your oven to 400Β°F (200Β°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the mashed potatoes, shredded cheese, egg, flour, salt, pepper, and chives if using. Mix until well combined.
  3. Scoop out tablespoon-sized portions of the mixture and roll them into balls. Place them on the prepared baking sheet.
  4. Bake for 20-25 minutes, or until the puffs are golden brown and crispy on the outside.
  5. Remove from the oven and let cool slightly before serving.

Notes

These puffs are best served warm and can be stored in an airtight container for up to 2 days.
