- 2 cups leftover mashed potatoes
- 1 cup shredded cheddar cheese
- 1 large egg
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 1/4 cup chopped chives
Instructions
- Preheat your oven to 400Β°F (200Β°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the mashed potatoes, shredded cheese, egg, flour, salt, pepper, and chives if using. Mix until well combined.
- Scoop out tablespoon-sized portions of the mixture and roll them into balls. Place them on the prepared baking sheet.
- Bake for 20-25 minutes, or until the puffs are golden brown and crispy on the outside.
- Remove from the oven and let cool slightly before serving.
Notes
These puffs are best served warm and can be stored in an airtight container for up to 2 days.
