Ingredients

  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup fresh basil leaves, chopped
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • 8 rice paper wrappers
  • 1 cup mixed greens
  • 1/2 cucumber, julienned

Instructions

  1. Step 1: In a bowl, mix lemon juice, lemon zest, basil, garlic, salt, and pepper to create a marinade.
  2. Step 2: Place salmon fillets in the marinade and let sit for 15 minutes.
  3. Step 3: Grill the salmon over medium heat for 4-5 minutes per side until cooked through.
  4. Step 4: Remove salmon and let cool, then flake into pieces.
  5. Step 5: Soak rice paper wrappers in warm water for 10 seconds until soft.
  6. Step 6: Place a wrapper on a flat surface, add mixed greens, cucumber, and flaked salmon in the center.
