- 8 rice paper wrappers
- 1 cup mixed greens
- 1/2 cucumber, julienned
Instructions
- Step 1: In a bowl, mix lemon juice, lemon zest, basil, garlic, salt, and pepper to create a marinade.
- Step 2: Place salmon fillets in the marinade and let sit for 15 minutes.
- Step 3: Grill the salmon over medium heat for 4-5 minutes per side until cooked through.
- Step 4: Remove salmon and let cool, then flake into pieces.
- Step 5: Soak rice paper wrappers in warm water for 10 seconds until soft.
- Step 6: Place a wrapper on a flat surface, add mixed greens, cucumber, and flaked salmon in the center.
- Step 7: Roll tightly and repeat with remaining ingredients.
- Step 8: Serve immediately with a side of lemon wedges.
Notes
For a vegetarian version, substitute salmon with tofu. Ensure basil is fresh for the best flavor.
