- 1 1/2 cups graham cracker crumbs
- 1/3 cup butter, melted
- 2 packages (8 oz each) cream cheese, softened
- 1 cup sugar
- 1/2 cup lemon juice
- 2 teaspoons lemon zest
- 2 large eggs
Instructions
- Preheat oven to 350Β°F (175Β°C). Grease a 9×13 inch baking dish.
- In a medium bowl, mix graham cracker crumbs and melted butter. Press into the bottom of the prepared dish.
- In a large bowl, beat cream cheese and sugar until smooth. Add lemon juice, lemon zest, and eggs; beat until well combined.
- Pour the mixture over the crust and spread evenly.
- Bake for 25-30 minutes or until the center is set. Cool completely, then refrigerate for at least 2 hours before cutting into bars.
Notes
For a tangier flavor, add extra lemon zest. Store in an airtight container in the refrigerator for up to 5 days.
