Ingredients

  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1/2 cup lemon curd
  • 1/4 cup granulated sugar for topping

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla.
  4. Gradually add dry ingredients to the wet mixture, mixing until combined.
  5. Scoop dough onto prepared sheets, making indentations in the centers.
  6. Fill indentations with lemon curd.
  7. Bake for 10-12 minutes, then sprinkle with sugar and broil briefly for a crème brûlée effect.
  8. Cool on wire racks before serving.
