- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- For the glaze:
- 1 cup powdered sugar
- 2–3 tablespoons fresh lemon juice
Instructions
- Preheat oven to 350Β°F and line a baking sheet with parchment paper.
- In a large bowl, cream together butter and powdered sugar until light and fluffy.
- Mix in lemon zest and vanilla extract.
- Gradually add flour and mix until a dough forms.
- Roll dough into 1-inch balls and place on the prepared baking sheet.
- Flatten each ball slightly with a fork.
- Bake for 12-15 minutes or until edges are lightly golden.
- Allow cookies to cool completely.
- For the glaze, whisk together powdered sugar and lemon juice until smooth.
- Dip the top of each cookie into the glaze and let set on a wire rack.
Notes
Store in an airtight container for up to 5 days. For a stronger lemon flavor, add more zest.
