Description

These buttery shortbread cookies are topped with a tangy lemon glaze, perfect for a refreshing treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • For the glaze:
  • 1 cup powdered sugar
  • 23 tablespoons fresh lemon juice

Instructions

  1. Preheat oven to 350Β°F and line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter and powdered sugar until light and fluffy.
  3. Mix in lemon zest and vanilla extract.
  4. Gradually add flour and mix until a dough forms.
  5. Roll dough into 1-inch balls and place on the prepared baking sheet.
  6. Flatten each ball slightly with a fork.
  7. Bake for 12-15 minutes or until edges are lightly golden.
  8. Allow cookies to cool completely.
  9. For the glaze, whisk together powdered sugar and lemon juice until smooth.
  10. Dip the top of each cookie into the glaze and let set on a wire rack.

Notes

Store in an airtight container for up to 5 days. For a stronger lemon flavor, add more zest.
