Description

Ingredients

  • 2 boneless chicken breasts
  • Juice and zest of 1 lemon
  • 2 tablespoons fresh herbs (like rosemary and thyme)
  • 4 medium carrots, peeled and sliced
  • 2 cups broccoli florets
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400Β°F (200Β°C).
  2. In a bowl, mix chicken breasts with lemon juice, zest, herbs, salt, and pepper. Marinate for 15 minutes.
  3. Toss sliced carrots with 1 tablespoon olive oil, salt, and pepper on a baking sheet.
  4. Place marinated chicken on another baking sheet.
  5. Roast chicken and carrots in the oven for 20-25 minutes until chicken is cooked through and carrots are tender.
  6. In the last 10 minutes, toss broccoli with remaining olive oil, salt, and pepper, then sprinkle with Parmesan and add to the oven.
  7. Remove from oven and let rest for 5 minutes before serving.

Notes

For extra flavor, use fresh herbs if available. Ensure chicken reaches an internal temperature of 165Β°F.
