- 2 boneless chicken breasts
- Juice and zest of 1 lemon
- 2 tablespoons fresh herbs (like rosemary and thyme)
- 4 medium carrots, peeled and sliced
- 2 cups broccoli florets
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400Β°F (200Β°C).
- In a bowl, mix chicken breasts with lemon juice, zest, herbs, salt, and pepper. Marinate for 15 minutes.
- Toss sliced carrots with 1 tablespoon olive oil, salt, and pepper on a baking sheet.
- Place marinated chicken on another baking sheet.
- Roast chicken and carrots in the oven for 20-25 minutes until chicken is cooked through and carrots are tender.
- In the last 10 minutes, toss broccoli with remaining olive oil, salt, and pepper, then sprinkle with Parmesan and add to the oven.
- Remove from oven and let rest for 5 minutes before serving.
Notes
For extra flavor, use fresh herbs if available. Ensure chicken reaches an internal temperature of 165Β°F.
