- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- Zest of 2 lemons
- Zest of 2 limes
- 1 cup pitted cherries, chopped
- 1/2 cup pistachios, chopped
- 1 tsp vanilla extract
Instructions
- Preheat oven to 325Β°F and grease a 9-inch springform pan.
- Mix graham cracker crumbs and melted butter; press into the bottom of the pan to form the crust.
- In a large bowl, beat cream cheese and sugar until smooth and creamy.
- Add eggs one at a time, mixing well after each addition.
- Stir in lemon zest, lime zest, cherries, pistachios, and vanilla extract until evenly combined.
- Pour the mixture over the crust and bake for 55-60 minutes, or until the center is set.
- Allow to cool completely, then refrigerate for at least 4 hours before serving.
Notes
For best results, use fresh cherries if available; ensure all ingredients are at room temperature before mixing.
