Description

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • Zest of 2 lemons
  • Zest of 2 limes
  • 1 cup pitted cherries, chopped
  • 1/2 cup pistachios, chopped
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 325Β°F and grease a 9-inch springform pan.
  2. Mix graham cracker crumbs and melted butter; press into the bottom of the pan to form the crust.
  3. In a large bowl, beat cream cheese and sugar until smooth and creamy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in lemon zest, lime zest, cherries, pistachios, and vanilla extract until evenly combined.
  6. Pour the mixture over the crust and bake for 55-60 minutes, or until the center is set.
  7. Allow to cool completely, then refrigerate for at least 4 hours before serving.
