- 1 pound ground beef
- 8 slices bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup diced onion
- 1/2 cup sliced pickles
- 1/4 cup ketchup (sugar-free)
- 1/4 cup mustard
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- For the Topping:
- 1 avocado, sliced
- Fresh lettuce, chopped
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, cook the ground beef until browned, breaking it up with a spoon. Drain excess fat.
- Add the diced onion, minced garlic, salt, pepper, and paprika to the beef. Cook for another 2-3 minutes until onions are softened.
- Remove from heat and stir in half the crumbled bacon, pickles, ketchup, mustard, and half the cheddar and mozzarella cheeses.
- Transfer the mixture to a greased casserole dish.
- Sprinkle the remaining bacon and cheeses on top.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Garnish with sliced avocado and chopped lettuce before serving.
Notes
This casserole is great for meal prep and reheats well. Customize with your favorite low-carb toppings like tomato or jalapeños.
