- 8 oz soft goat cheese, at room temperature
- 2 medium beets, roasted and pureed
- 1/2 cup shelled pistachios, finely chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400Β°F and roast beets until tender, about 45 minutes; let cool and puree.
- In a bowl, mix goat cheese with half of the beet puree until swirled; form into a log.
- Roll the cheese log in chopped pistachios to coat evenly.
- Refrigerate for at least 1 hour before serving.
- Slice and serve with crackers or bread.
Notes
For a more intense color, use red beets; store in an airtight container for up to 3 days.
