Description

A vibrant goat cheese log featuring a swirl of roasted beets and a crunchy pistachio crust, perfect for appetizers or holiday gatherings.


Ingredients

  • 8 oz soft goat cheese, at room temperature
  • 2 medium beets, roasted and pureed
  • 1/2 cup shelled pistachios, finely chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400Β°F and roast beets until tender, about 45 minutes; let cool and puree.
  2. In a bowl, mix goat cheese with half of the beet puree until swirled; form into a log.
  3. Roll the cheese log in chopped pistachios to coat evenly.
  4. Refrigerate for at least 1 hour before serving.
  5. Slice and serve with crackers or bread.

Notes

For a more intense color, use red beets; store in an airtight container for up to 3 days.
