Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking dish.
- In a medium bowl, whisk together the flour, baking powder, salt, and granulated sugar.
- Stir in the milk and melted butter until just combined. Do not overmix.
- Pour the batter into the prepared baking dish. Sprinkle the lemon zest and juice evenly over the batter.
- Carefully pour the boiling water over the entire mixture without stirring. This creates the magical layers.
- Bake for 40-45 minutes, or until the top is golden and the center is set.
- Let cool for 10-15 minutes before serving. Optionally, sprinkle with additional sugar.
Notes
This cobbler is best served warm with vanilla ice cream. For a tangier version, add more lemon juice.
