Description

A magical lemon cobbler that creates its own layers while baking, resulting in a delightful dessert with a gooey lemon filling and a golden crust.


Ingredients

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 2 lemons, zested and juiced (about 1/2 cup juice)
  • 1 cup boiling water
  • Additional sugar for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking dish.
  2. In a medium bowl, whisk together the flour, baking powder, salt, and granulated sugar.
  3. Stir in the milk and melted butter until just combined. Do not overmix.
  4. Pour the batter into the prepared baking dish. Sprinkle the lemon zest and juice evenly over the batter.
  5. Carefully pour the boiling water over the entire mixture without stirring. This creates the magical layers.
  6. Bake for 40-45 minutes, or until the top is golden and the center is set.
  7. Let cool for 10-15 minutes before serving. Optionally, sprinkle with additional sugar.

Notes

This cobbler is best served warm with vanilla ice cream. For a tangier version, add more lemon juice.
