- 1 pound large shrimp, peeled and deveined
- 2 ripe mangoes, diced
- 1 large avocado, sliced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil

- Salt and pepper to taste
- Mixed greens for salad base
Instructions
- In a bowl, whisk together olive oil, lime juice, salt, and pepper to make the dressing.
- Cook the shrimp in a skillet over medium heat for 3-4 minutes until pink and opaque.
- In a large salad bowl, combine the mixed greens, diced mangoes, sliced avocado, red onion, and cooked shrimp.
