Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 ripe mangoes, diced
  • 1 large avocado, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Mixed greens for salad base

Instructions

  1. In a bowl, whisk together olive oil, lime juice, salt, and pepper to make the dressing.
  2. Cook the shrimp in a skillet over medium heat for 3-4 minutes until pink and opaque.
  3. In a large salad bowl, combine the mixed greens, diced mangoes, sliced avocado, red onion, and cooked shrimp.
  4. Pour the dressing over the salad and toss gently to coat.
  5. Garnish with fresh cilantro and serve immediately.

Notes

For best results, use ripe mangoes and fresh shrimp. This salad is best enjoyed chilled.
