Description

A flavorful fall side dish featuring acorn squash roasted with maple syrup and pecans.


Ingredients

  • 2 medium acorn squash, halved and seeded
  • 1/4 cup pure maple syrup
  • 1/2 cup chopped pecans
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the acorn squash halves cut-side up on a baking sheet.
  3. In a small bowl, mix the maple syrup, olive oil, salt, pepper, and cinnamon.
  4. Brush the mixture over the squash halves and sprinkle with chopped pecans.
  5. Roast in the preheated oven for 40-50 minutes, or until the squash is tender when pierced with a fork.

Notes

Serve warm as a side dish. For a nut-free version, substitute pecans with seeds.
