Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • Fresh basil for garnish

Instructions

  1. Step 1: Heat the olive oil in a large skillet over medium heat.
  2. Step 2: Season the chicken with salt, pepper, and Italian seasoning, then add to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
  3. Step 3: In the same skillet, add the minced garlic and cook for 1 minute until fragrant.
  4. Step 4: Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer.
  5. Step 5: Stir in the Parmesan cheese and sun-dried tomatoes, cooking until the sauce thickens, about 3-4 minutes.
  6. Step 6: Return the chicken to the skillet and toss to coat in the sauce. Simmer for another 2 minutes.
  7. Step 7: Garnish with fresh basil and serve immediately.

Notes

This dish pairs well with pasta or rice. For a spicier version, add red pepper flakes.
