Description

A creamy, indulgent one-pan chicken recipe with risoni pasta, perfect for special occasions.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 cup risoni pasta
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil in a large pan over medium heat and sear the chicken until golden brown on both sides, about 5 minutes per side. Remove and set aside.
  3. In the same pan, add minced garlic and cook for 1 minute until fragrant.
  4. Add risoni, heavy cream, chicken broth, and sun-dried tomatoes. Stir to combine.
  5. Bring to a simmer and return the chicken to the pan.
  6. Cover and cook for 15-20 minutes, or until risoni is tender and chicken is cooked through.
  7. Stir in Parmesan cheese and garnish with fresh basil before serving.

Notes

This dish is best served hot and pairs well with a side salad. For a spicier version, add red pepper flakes.
