- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic, minced
- 1 cup risoni pasta
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup sun-dried tomatoes, chopped
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a large pan over medium heat and sear the chicken until golden brown on both sides, about 5 minutes per side. Remove and set aside.
- In the same pan, add minced garlic and cook for 1 minute until fragrant.
- Add risoni, heavy cream, chicken broth, and sun-dried tomatoes. Stir to combine.
- Bring to a simmer and return the chicken to the pan.
- Cover and cook for 15-20 minutes, or until risoni is tender and chicken is cooked through.
- Stir in Parmesan cheese and garnish with fresh basil before serving.
Notes
This dish is best served hot and pairs well with a side salad. For a spicier version, add red pepper flakes.
