- 1 onion, thinly sliced
- 2 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 teaspoon dried oregano

- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1/4 cup Kalamata olives, pitted
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground beef and cook until browned, breaking it apart with a spoon.
- Add onion and garlic, sauté until softened.
- Stir in red bell pepper, zucchini, oregano, basil, salt, and pepper; cook for 5 minutes.
- Add cherry tomatoes and olives; cook for another 2-3 minutes until vegetables are tender.
- Garnish with fresh parsley and serve hot.
Notes
For a vegetarian version, substitute ground beef with plant-based meat or mushrooms. Adjust spices to taste.
