Ingredients

  • 1 pound ground beef
  • 2 tablespoons olive oil
  • 1 onion, thinly sliced
  • 2 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, pitted
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground beef and cook until browned, breaking it apart with a spoon.
  3. Add onion and garlic, sauté until softened.
  4. Stir in red bell pepper, zucchini, oregano, basil, salt, and pepper; cook for 5 minutes.
  5. Add cherry tomatoes and olives; cook for another 2-3 minutes until vegetables are tender.
  6. Garnish with fresh parsley and serve hot.

Notes

For a vegetarian version, substitute ground beef with plant-based meat or mushrooms. Adjust spices to taste.
