- 1 pound ground beef
- 2 tablespoons olive oil
- 1 onion, thinly sliced
- 2 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Optional: 1/4 cup feta cheese, crumbled
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground beef to the skillet and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
- Add onion and garlic; sautΓ© until softened, about 2 minutes.
- Stir in bell pepper, zucchini, and cherry tomatoes; cook for another 5 minutes until vegetables are tender.
- Season with oregano, basil, salt, and pepper; mix well and cook for 1 more minute.
- Remove from heat and sprinkle with feta cheese if desired. Serve immediately.
Notes
