Ingredients

  • 1 pound ground beef
  • 2 tablespoons olive oil
  • 1 onion, thinly sliced
  • 2 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Optional: 1/4 cup feta cheese, crumbled

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground beef to the skillet and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
  3. Add onion and garlic; sautΓ© until softened, about 2 minutes.
  4. Stir in bell pepper, zucchini, and cherry tomatoes; cook for another 5 minutes until vegetables are tender.
  5. Season with oregano, basil, salt, and pepper; mix well and cook for 1 more minute.
  6. Remove from heat and sprinkle with feta cheese if desired. Serve immediately.

Notes

For a low-carb option, serve over cauliflower rice. Adjust spices to taste for more heat.
