Ingredients

- 4 medium zucchinis
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/2 cup kalamata olives, pitted and sliced
- 1/2 cup feta cheese, crumbled
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat oven to 375Β°F (190Β°C).
- Cut zucchinis in half lengthwise and scoop out the seeds to create boats.
- In a skillet, heat olive oil over medium heat. Add onion and garlic, sautΓ© until softened.
- Add cherry tomatoes, olives, oregano, salt, and pepper. Cook for 5 minutes.
- Stuff the zucchini boats with the mixture and top with feta cheese.
- Place on a baking sheet and bake for 20-25 minutes until zucchini is tender.
Notes
For a vegan version, substitute feta with a plant-based alternative.
