Description

Stuffed zucchini boats filled with Mediterranean flavors like tomatoes, olives, and feta cheese, perfect for a healthy dinner.


Ingredients

Scale
  • 4 medium zucchinis
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375Β°F (190Β°C).
  2. Cut zucchinis in half lengthwise and scoop out the seeds to create boats.
  3. In a skillet, heat olive oil over medium heat. Add onion and garlic, sautΓ© until softened.
  4. Add cherry tomatoes, olives, oregano, salt, and pepper. Cook for 5 minutes.
  5. Stuff the zucchini boats with the mixture and top with feta cheese.
  6. Place on a baking sheet and bake for 20-25 minutes until zucchini is tender.

Notes

For a vegan version, substitute feta with a plant-based alternative.
