Description

These Mexican Chicken Pinwheels are flavorful appetizers made with shredded chicken, cream cheese, and spices, wrapped in tortillas and sliced for easy serving.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced green onions
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon taco seasoning
  • 4 large flour tortillas
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix the shredded chicken, cream cheese, cheddar cheese, green onions, cilantro, and taco seasoning until well combined.
  2. Season with salt and pepper to taste.
  3. Spread the mixture evenly over each tortilla, leaving a small border around the edges.
  4. Roll up the tortillas tightly and wrap them in plastic wrap.
  5. Refrigerate for at least 1 hour to firm up.
  6. Slice into 1-inch pinwheels and serve.

Notes

For a spicier version, add diced jalapeΓ±os or hot sauce to the mixture. These can be made ahead and stored in the fridge for up to 2 days.
