- 8 ounces elbow macaroni
- 1 cup corn kernels
- 1/2 cup diced red bell pepper
- 1/2 cup diced green bell pepper
- 1/2 cup chopped tomatoes
- 1/4 cup sliced black olives
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- 1/2 cup mayonnaise
- 2 tablespoons lime juice
- 1 teaspoon ground cumin
- Salt and pepper to taste
Instructions
- Cook the macaroni according to package instructions; drain and rinse under cold water.
- In a large bowl, combine the cooked macaroni, corn, bell peppers, tomatoes, olives, onion, and cilantro.
- In a small bowl, whisk together the mayonnaise, lime juice, cumin, salt, and pepper.
- Pour the dressing over the macaroni mixture and toss to coat evenly.
- Refrigerate for at least 1 hour before serving to allow flavors to meld.
Notes
For a spicier version, add diced jalapenos or a dash of hot sauce.
