Description

An easy and flavorful side dish perfect for BBQs, featuring macaroni mixed with fresh vegetables and a zesty dressing.


Ingredients

  • 8 ounces elbow macaroni
  • 1 cup corn kernels
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 1/2 cup chopped tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. Cook the macaroni according to package instructions; drain and rinse under cold water.
  2. In a large bowl, combine the cooked macaroni, corn, bell peppers, tomatoes, olives, onion, and cilantro.
  3. In a small bowl, whisk together the mayonnaise, lime juice, cumin, salt, and pepper.
  4. Pour the dressing over the macaroni mixture and toss to coat evenly.
  5. Refrigerate for at least 1 hour before serving to allow flavors to meld.

Notes

For a spicier version, add diced jalapenos or a dash of hot sauce.
