Description
These mini chicken quesadillas are packed with flavor and perfect for appetizers or snacks. Tender chicken, melted cheese, and spices all wrapped in a crispy tortilla.

- 1 cup cooked chicken breast, shredded
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 4 large flour tortillas
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Salsa, sour cream, and guacamole for serving
Instructions
- In a large bowl, combine the shredded chicken, cheeses, chili powder, garlic powder, salt, and pepper. Mix well.
- Preheat a large skillet over medium heat and lightly brush with olive oil.
- Place a tortilla in the skillet. Sprinkle half of the tortilla with about 1/4 of the chicken mixture. Fold the tortilla in half and cook for 2-3 minutes per side until golden brown and cheese is melted.
- Repeat with the remaining tortillas and filling.
- Cut each quesadilla into mini triangles and serve with salsa, sour cream, and guacamole.
Notes
Cooked chicken can be from grilled, baked, or rotisserie. Reduce heat to avoid burning.
