MINI CHICKEN QUESADILLAS

Description

These mini chicken quesadillas are packed with flavor and perfect for appetizers or snacks. Tender chicken, melted cheese, and spices all wrapped in a crispy tortilla.


Ingredients

  • 1 cup cooked chicken breast, shredded
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Salsa, sour cream, and guacamole for serving

Instructions

  1. In a large bowl, combine the shredded chicken, cheeses, chili powder, garlic powder, salt, and pepper. Mix well.
  2. Preheat a large skillet over medium heat and lightly brush with olive oil.
  3. Place a tortilla in the skillet. Sprinkle half of the tortilla with about 1/4 of the chicken mixture. Fold the tortilla in half and cook for 2-3 minutes per side until golden brown and cheese is melted.
  4. Repeat with the remaining tortillas and filling.
  5. Cut each quesadilla into mini triangles and serve with salsa, sour cream, and guacamole.

Notes

Cooked chicken can be from grilled, baked, or rotisserie. Reduce heat to avoid burning.
