- Crust:
- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- Filling:
- 3 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 4 large eggs
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 1 cup semisweet chocolate chips, melted
- 1/2 cup fudge sauce
- Topping:
- 1 cup whipped cream
- Fresh mint leaves for garnish
- Chocolate shavings
Instructions
- Preheat oven to 325Β°F (163Β°C). Grease a 9-inch springform pan.
- For the crust: In a bowl, mix chocolate cookie crumbs, sugar, and melted butter. Press into the bottom of the pan.
- Bake the crust for 10 minutes, then let it cool.
- For the filling: In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well.
- Stir in sour cream, vanilla, and peppermint extract. Divide the mixture in half.
- Mix melted chocolate into one half of the filling. Pour into the crust.
- Layer the fudge sauce over the chocolate filling, then add the remaining plain filling on top.
- Bake for 55-60 minutes or until the center is set. Cool in the oven with the door ajar.
- Refrigerate for at least 4 hours or overnight. Top with whipped cream, mint leaves, and chocolate shavings before serving.
