Instructions
- Preheat your oven to 350°F (175°C).
- In a large pot, boil the cubed potatoes until they are tender, about 15-20 minutes. Drain and return to the pot.
- Add the shredded cheddar cheese, sour cream, melted butter, garlic powder, salt, and pepper to the potatoes.
- Mash the mixture until smooth and creamy, then fold in the chopped green onions if using.
- Transfer the mixture to a greased baking dish and spread evenly.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
