- Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/3 cup melted butter
- Filling:
- 3 packages (8 oz each) cream cheese, softened
- 1 cup sugar
- 3 eggs
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 2 tablespoons instant coffee granules dissolved in 2 tablespoons hot water
- 1/2 cup cocoa powder
Instructions
- Preheat oven to 325ยฐF (163ยฐC) and grease a 9-inch springform pan.
- In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, beating well after each addition.
- Mix in sour cream, vanilla, dissolved coffee, and cocoa powder.
- Pour filling over crust and bake for 55-60 minutes or until center is set.
- Cool in oven with door ajar for 1 hour, then refrigerate for at least 4 hours before serving.
Notes
For a stronger mocha flavor, increase the coffee granules. Store in the refrigerator for up to 5 days.
