Ingredients

  • 1 1/2 cups warm water
  • 1 tablespoon sugar
  • 2 teaspoons kosher salt
  • 1 package active dry yeast
  • 4 1/2 cups all-purpose flour
  • 4 tablespoons unsalted butter, melted
  • 10 cups water
  • 2/3 cup baking soda
  • 1 egg yolk beaten with 1 tablespoon water
  • Coarse salt for sprinkling
  • 8 ounces mozzarella cheese, cut into sticks

Instructions

  1. In a large bowl, combine warm water, sugar, and kosher salt. Sprinkle the yeast on top and let it sit for 5 minutes until foamy.
  2. Add the flour and melted butter to the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth.
  4. Place the dough in a greased bowl, cover, and let it rise in a warm place for 1 hour.
  5. Preheat oven to 450°F (230°C). Bring 10 cups of water and baking soda to a boil.
  6. Divide the dough into 8 pieces. Roll each piece into a rope and stuff with mozzarella cheese sticks.
  7. Form into pretzel shapes and boil in the baking soda water for 30 seconds per side.
  8. Place on a baking sheet, brush with egg wash, and sprinkle with coarse salt.
  9. Bake for 12-14 minutes until golden brown.

Notes

Ensure the cheese is fully sealed inside the dough to prevent leakage during baking. Serve warm for the best gooey texture.
