- 2 slices whole grain bread
- 1 ripe avocado, sliced
- 2 large eggs
- 1 cup fresh mushrooms, sliced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add sliced mushrooms and sauté until golden, about 5 minutes.
- In a bowl, beat the eggs and season with salt and pepper.
- Pour the eggs into the skillet with mushrooms and scramble until cooked.
- Toast the bread slices.
- Spread avocado on the toasted bread and top with the mushroom and egg mixture.
Notes
For a vegan version, substitute eggs with tofu scramble. Serve immediately for the best texture.
