Description

A hearty breakfast toast featuring sautéed mushrooms, fluffy scrambled eggs, and creamy avocado on whole grain bread.


Ingredients

Scale
  • 2 slices whole grain bread
  • 1 ripe avocado, sliced
  • 2 large eggs
  • 1 cup fresh mushrooms, sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add sliced mushrooms and sauté until golden, about 5 minutes.
  3. In a bowl, beat the eggs and season with salt and pepper.
  4. Pour the eggs into the skillet with mushrooms and scramble until cooked.
  5. Toast the bread slices.
  6. Spread avocado on the toasted bread and top with the mushroom and egg mixture.

Notes

For a vegan version, substitute eggs with tofu scramble. Serve immediately for the best texture.
