- 1 cup graham cracker crumbs
- 2 tablespoons melted butter
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup whipped cream
- 2 ripe bananas, sliced
- 1 cup fresh strawberries, chopped
- Optional: Additional strawberries for garnish
Instructions
- In a bowl, mix graham cracker crumbs and melted butter until combined.
- Press the mixture into the bottom of mini cheesecake molds or cups.
- In another bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
- Fold in whipped cream gently.
- Layer the cream cheese mixture over the crust in the molds.
- Top with sliced bananas and chopped strawberries.
- Refrigerate for at least 2 hours or until set.
- Garnish with additional strawberries before serving.
Notes
These cheesecakes are best enjoyed fresh and can be stored in the refrigerator for up to 2 days. Use ripe bananas for the best flavor.
