A quick and easy one-pan dish featuring creamy parmesan chicken and rice, perfect for busy weeknights.
Ingredients

- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: 1 cup frozen peas
Instructions
- Heat olive oil in a large pan over medium heat.
- Add chicken pieces and cook until browned, about 5 minutes.
- Stir in garlic and cook for 1 minute until fragrant.
- Add rice and chicken broth, bring to a boil, then reduce heat and simmer covered for 15 minutes.
- Stir in heavy cream and Parmesan cheese, cooking for another 5 minutes until creamy.
- Add peas if using, and season with salt and pepper.
Notes
For a healthier version, use low-fat cream and add more vegetables.
