Description

A quick and easy one-pan dish featuring creamy parmesan chicken and rice, perfect for busy weeknights.


Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: 1 cup frozen peas

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add chicken pieces and cook until browned, about 5 minutes.
  3. Stir in garlic and cook for 1 minute until fragrant.
  4. Add rice and chicken broth, bring to a boil, then reduce heat and simmer covered for 15 minutes.
  5. Stir in heavy cream and Parmesan cheese, cooking for another 5 minutes until creamy.
  6. Add peas if using, and season with salt and pepper.

Notes

For a healthier version, use low-fat cream and add more vegetables.
