For the Crust:
- 1 lb boneless, skinless chicken breasts, cubed
- 8 oz penne pasta, uncooked
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 4 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups fresh spinach
Instructions
1. Prepare the Crust:
- In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the cubed chicken and cook until browned on all sides, about 5-7 minutes. Add the minced garlic and cook for one more minute until fragrant.
- Pour in the chicken broth and heavy cream. Add the uncooked penne, Italian seasoning, salt, and pepper. Stir to combine. Bring to a boil, then reduce heat to a simmer.
- Cover and cook for 15-18 minutes, stirring occasionally, until the pasta is tender and the liquid has thickened. Stir in the parmesan cheese and fresh spinach until the cheese is melted and the spinach is wilted. Serve immediately.
