Irresistibly soft and chewy chocolate cookies with a surprise peanut butter cup baked right in the center.

For the Crust:
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 24 miniature peanut butter cups, unwrapped
Instructions
1. Prepare the Crust:
- Preheat oven to 350Β°F (175Β°C). Line a muffin tin with paper liners.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
- Gradually blend the dry flour mixture into the wet ingredients until just combined.
- Scoop a heaping tablespoon of dough and press it into the bottom and up the sides of each muffin liner. Place one unwrapped peanut butter cup in the center of each.
- Bake for 10-12 minutes, or until the cookie dough is set. Allow to cool completely in the pan before removing.
