Peanut Butter Cup Cookies

Irresistibly soft and chewy chocolate cookies with a surprise peanut butter cup baked right in the center.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 24 miniature peanut butter cups, unwrapped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350Β°F (175Β°C). Line a muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
  4. Gradually blend the dry flour mixture into the wet ingredients until just combined.
  5. Scoop a heaping tablespoon of dough and press it into the bottom and up the sides of each muffin liner. Place one unwrapped peanut butter cup in the center of each.
  6. Bake for 10-12 minutes, or until the cookie dough is set. Allow to cool completely in the pan before removing.

Notes

You can customize the seasonings to taste.
