- Crust:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- Filling:
- 4 large eggs
- 1 1/2 cups corn syrup
- 1 1/2 cups packed brown sugar
- 3 tablespoons melted butter
- 1 1/2 teaspoons vanilla extract
- 2 1/2 cups chopped pecans
Instructions
- Preheat oven to 350Β°F (175Β°C). Grease a 9×13 inch baking pan.
- For the crust: In a medium bowl, mix flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Press into the bottom of the prepared pan.
- Bake crust for 20 minutes or until lightly golden.
- For the filling: In a large bowl, beat eggs, corn syrup, brown sugar, melted butter, and vanilla extract until smooth. Stir in pecans.
- Pour filling over baked crust and spread evenly.
- Bake for 25-30 minutes or until set. Cool completely before cutting into bars.
Notes
Store in an airtight container for up to 5 days. For a nuttier flavor, toast the pecans before adding.
