Pecan Pie Cobbler

A warm and gooey Southern dessert that combines the rich, buttery flavors of pecan pie with the comforting texture of a cobbler.

For the Crust:

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar, divided
  • 3/4 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 cup chopped pecans
  • 1 cup packed light brown sugar
  • 1 1/2 cups hot water
  • 1 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  2. In a medium bowl, whisk together flour, baking powder, salt, and 1/2 cup of the granulated sugar. Stir in the milk and melted butter until just combined. Pour the batter into the prepared baking dish.
  3. Sprinkle the chopped pecans and the remaining 1/4 cup granulated sugar evenly over the batter.
  4. In a separate bowl, combine the brown sugar, hot water, and vanilla extract. Stir until the sugar is mostly dissolved. Carefully pour this mixture over the batter in the dish. DO NOT STIR.
  5. Bake for 40-45 minutes, or until the top is golden brown and the center is set. The cobbler will have a gooey sauce on the bottom. Let it cool for 10-15 minutes before serving.

Notes

You can customize the seasonings to taste.
