Perfectly Tender and Juicy London Broil with Herb Butter

A classic, budget-friendly steak marinated and broiled to perfection, then topped with a rich and flavorful homemade herb butter.

For the Crust:

  • 1 (2 pound) London Broil (top round steak)
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 teaspoon black pepper
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt

Instructions

1. Prepare the Crust:

  1. In a small bowl, whisk together soy sauce, olive oil, red wine vinegar, Worcestershire sauce, minced garlic, and black pepper. Place the London Broil in a large resealable bag and pour the marinade over it. Seal the bag and refrigerate for at least 4 hours, or preferably overnight, turning occasionally.
  2. About 30 minutes before cooking, remove the steak from the refrigerator to bring it to room temperature. Preheat your broiler on high and position an oven rack about 6 inches from the heat source.
  3. While the broiler heats, make the herb butter. In a bowl, combine the softened butter, parsley, chives, thyme, garlic powder, and salt. Mix until well combined. Form into a log on a piece of plastic wrap, roll up, and twist the ends. Place in the refrigerator to firm up.
  4. Remove the steak from the marinade and pat it very dry with paper towels. Place the steak on a broiler pan or a wire rack set inside a baking sheet. Broil for 6-7 minutes on the first side.
  5. Carefully flip the steak and broil for another 5-7 minutes for medium-rare (internal temperature of 135°F), or until desired doneness is reached. Transfer the steak to a cutting board and let it rest for 10 minutes.
  6. Slice the steak very thinly against the grain. Serve immediately with a slice of the chilled herb butter melting on top.

Notes

You can customize the seasonings to taste.
